Yoshihiro Imai is the chef of monk, a 14 seat omakase restaurant in Kyoto. He is passionate about wood-fired cooking, seasonal produce, farmers, and pizza. This is a collection of his essays, recipes and anecdotes along with stunning photographs on how the restaurant came to be and how he works. This is not 'traditional' Japanese cooking but it is exquisite and the chef also happens to be one of the world's most interesting pizza makers. Let's put it this way, I am putting my copy in my bookshelf rather than with my cookbooks.
